How long does it take for break-in on a 3.5 EcoBoost. I feel the need to stomp on it but don't want to until it's ready.

You want to vary rpm's so that the rings seat properly. Cruise holds the rpm's to a steady pace unless you encounter steep hills. It's not something you want. Cruise can also lug the engine at low rpm's without downshifting which is also bad for the main and rod bearings. Reasons stated above, vary the rpm's, helps to seat everything so they last. Hope this helps.What’s the reason that you shouldn’t use Cruise during Break In period?
I am going to have a 900 mile drive home from the dealer and using Cruise would obviously make that drive a lot easier.
