I just noticed the interior in my 2021 lariat is all black except the roof liner and pillars are greyish is this normal or should it be all black like my 2021 xlt was

Pretty sure that is normal. 2021 was a bit of shit-show with how ford has done their color combinations.
Lariat and Lariat Chrome get black interiors with a grey roof liner
Lariat Sport get a black interior with black roof liner, but odd red/brown accent pieces on the dash, doors and center arm rest.

I'm not 100% sure on this one but I think if you ordered the grey interior, you got a darker roof liner than the black interiorI only sat in once and didn't really pay attention...

I have a Lariat Sport, and the black headliner is a little dark for my tastes. On days when I have the moonroof shade closed because the sun's in my eyes, it can feel like a coffin. And yeah...those "odd" red/brown accents, too...

Really, I can't help but agree with you, red-brown accents are a little annoying. I decided to replace them with the color #fffdd0 with https://create.vista.com/colors/palettes/yellow/. It looks cooler, it doesn't infuriate, but rather like it very much
