Adjustability is a big key for me as well, as I'm running some 285/60R20 Toyo AT3s on 20x9 (+25 offset) wheels. They JUST fit without any rubbing at stock height, but I haven't done more than commute in it so far. I just want to get a bit of wiggle room while maintaining some of the rake and improving ride quality.
I’m with you. I read on some other model trucks guys are getting as much as 1/2” of settling. I don’t want a 2” kit to settle at 1.5”. But I also don’t want a 3” kit that holds true to 3”.

Reading over at Tacomaworld, guys are getting them with very little or no preload out of the box. So I’m thinking a 2” set is really 2”+ once you adjust the collar for a little more preload. so it sounds like my first concern about a 2” kit settling low could just be cranked back up to 2”. So a 3” lift coilover would just have a 1” longer body to start with, not extra preload.
