To be honest I haven't even thought about road noise. It's a non issue. The wind noise that some how sneaks into my driver's window is the only noise I ever notice on the road. I have about 8k miles on the G2s now. Couldn't be happier.
I agree, I believe these sounds are either the speaker or some type of regenerative feature. Can't say for sure because it could be something entirely different, but knowing that Hybrids make abnormal sounds as compared to a stand alone ICE, it's probably the case.
It looks to me like Ford decided to go with the center console and shifter to go along with the "techy" fleet vehicle model. They figure the Pro will be for work and many companies could use the fold down console for computers and work space. It makes perfect sense to me that they include this...

I traded in my 6 speed Mustang for my 2021 PowerBoost and found this feature almost instantly. Really cool and useful feature as I needed to build that habit of placing it in park. Also makes sense with the PB being silent.
I can get over not having the scale, however the suspension damping feature..... It's kind of a bummer My 2021 will not have this as it's definitely an option I would have sprung for when purchasing my truck.
